Simply Delicious Energy Balls

Energy balls have a variety of different names: Energy bites, protein balls, power balls, and vegan truffles. These sweet, no bake treats take minutes to throw together, are filled with good-for-you ingredients, and makes for a quick, portable breakfast or snack. As a mid-morning or afternoon treat, energy balls are perfect for those on a busy schedule who need “a little pick me up”. Rather than reach for a cup of coffee (which is quite dehydrating), indulge in 2 or 3 of these tasty, protein packed gems to rejuvenate your body’s spirit! I can only describe them as rolled balls of raw, healthy ingredients resembling cookie dough, but unquestionably healthier and delicious! Ingredients

3/4 cup rolled oats

1/2 cup raw cashews

2 Tbsp. peanut butter

16-18 dates, pitted and chopped

2 Tbsp. agave nectar

1 Tbsp. hemp seeds

1 Tbsp. chia seeds

1/4 cup flax meal

1 tsp. vanilla extract

1/2 tsp. almond extract

1/4 cup vegan mini chocolate chips

Directions

Place the rolled oats and cashews into the bowl of a food processor and pulse until a flour consistency. Add the remaining ingredients, except for chocolate chips, and combine until a rollable paste is formed. Stir in chocolate chips. Place bowl in the refrigerator for 10-15 minutes to ensure that the mixture is easier to handle. Roll mixture into one-inch balls and place on parchment lined cookie sheet. Refrigerate until firm, then store in an airtight container.

Yields: 18 -20 Energie Balls

Note: If mixture is too wet, add a 1/4 cup of oat flour.
